Here at India Bistro we cook Indian cuisine found all over the Indian subcontinent. Today we want to focus on Kashmiri cuisine which is the cuisine of the Kashmir Valley. Kashmiri art of cooking has developed to a high degree of sophistication and evolved into its own cuisine. Rice has been the staple food in this region since ancient times. A typical everyday Kashmiri meal consists of a large serving of rice, mutton and vegetables cooked in oil, and yogurt. It’s important to note that unlike other regions of the Indian subcontinent which tend to be vegetarian for religious reasons, Kashmiris consume a substantial amount of meat as part of their diet. Kashmiri cuisine is broken up into the food of the Muslims, and the Hindu Pandits. Both share a love for lamb, despite Hindus not traditionally eating it in the rest of the country! Per capita people in the Kashmir region are the highest mutton consumers in the subcontinent. Meat stock is a salient ingredient even for ‘vegetarian’ dishes in Kashmir. As the cuisine is influenced mainly by Mughals, Kashmir is known for its Non-Vegetarian dishes. Holidays are celebrated with a lot of lamb dishes.
